Salt and black pepper, to taste

Extra-virgin olive oil, for frying

serves 4-6 people

Instructions:

  1. In a bowl or large resealable bag, combine buttermilk and chicken pieces. Marinate for at least 30 minutes, up to 12 hours.

  2. In another bowl or resealable bag, combine flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt and black pepper. Shake or stir to combine well.

  3. Remove chicken from buttermilk mixture, shaking off any excess liquid. Dredge in the flour mixture until well coated on all sides.

  4. Heat olive oil in a large skillet over medium-high heat until hot and simmering slightly. Add the chicken pieces and cook for 3-5 minutes per side until golden brown and cooked through.* Serve immediately with your favorite dipping sauce!
