One of my favorite quick and easy weeknight meals is fried chicken breasts. This is a dish that I can almost always whip up with ingredients that I have on hand, and my family loves it.

To make fried chicken breasts, you will need:

4-6 boneless, skinless chicken breasts

1 cup all-purpose flour

2 teaspoons paprika

1 teaspoon garlic powder

Dredge each chicken breast in the flour mixture until well coated.In a large skillet over medium heat, melt 1/2 inch of vegetable oil or butter. 8 chicken drumsticks 1 cup all-purpose flour 2 teaspoons smoked paprika 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon cayenne pepper Kosher salt and freshly ground black pepper 3 eggs 2 cups panko bread crumbs Vegetable oil, for frying Buttermilk ranch dressing, for dipping (optional) Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. In a shallow dish, whisk together flour, smoked paprika, garlic powder, onion powder, cayenne pepper, 1 teaspoon salt, and 1/2 teaspoon black pepper. In another shallow dish, beat eggs. Place panko in a third shallow dish.

Instructions: 1) In a large bowl, combine buttermilk, flour, baking powder, salt, and pepper. 2) Add chicken pieces to the bowl, making sure each piece is well coated with the batter. Let sit for at least 30 minutes. 3) Heat up oil or shortening in a large skillet over medium heat. Working in batches, add chicken pieces to the hot oil and cook for about 4 minutes per side, or until golden brown and cooked through. Serve immediately!
